Menu Monday

Yesterday was my hubby's birthday! He turned 32! We didn't do too much, spent some good ol quality time with our boys and then we had our friends over for a quiet birthday celebration. Patrick has been craving burgers on the BBQ since the first snowfall this winter. And since the weather is finally starting to warm up I decided we would make some yummy caramelized onion burgers. We dressed them with sauted mushrooms, homemade big mac sauce and avocado. (Well that's what I put on mine)! They were awesome! I also made Patrick a delicious lemon cake filled with lemon curd and covered in lemon cream cheese frosting. It was a great night! As for the rest of the week  I am obsessed with anything Asian cuisine right now. The Garlic Hoisin Pork we had last week was AMAZING! and I can't seem to get enough of Our Best Bites Orange Beef over rice. Sooo it's on the menu again this week! It was such a hit with our boys two weeks ago (I think I made it with shaved pork last time). I would make the Garlic Hoisin Pork again but I feel like two weeks in a row might be a little much. However; I bet you it will be on the menu next week. :) I have a giant whole chicken in my freezer and before the weather gets too warm I figured I would make a roasted chicken. I always like making roasted chicken because there is guaranteed leftovers. I plan on using the leftover chicken for the butter chicken we are having on Wednesday. This makes my life so much easier when I can use one meal and create two very different meals.  Since the weather has started to get really nice around my neck of the woods  I expect I will be spending a lot more time outside and less time in my kitchen. Be prepared, I have a feeling this spring/summer is going to be full of yummy bbq recipes and quick meals. As for now, I leave you with my menu plan for the week!
