I grew up with this soup. It reminds me of loud family conversations, my brothers play fighting in the kitchen, doing math at the kitchen table, and thick slices of french bread slathered in creamy butter! This soup is the epitome of comfort food. I'm sure many of you have a version of this soup stashed away in some old recipe book. This is my version.
Chop all your veggies into bite size pieces.
Saute them in some olive oil
Add ground beef and seasonings
Brown the meat
Add your diced tomatoes, beef broth, water and bay leaves and bring to a boil. Let simmer for two hours
After the two hours, add your barley and simmer for another hour
Serve and enjoy with some nice fresh bread slathered in butter!

Oops silly me!, In the recipe I said to add onion powder to the ground beef, I meant, add garlic powder. ;)
